Cadillac en Fronsadais, Aquitania, Bordeaux, France.

Domaine Serisier is the project of Australian owner Richard Serisier with Stephane Renie as winemaker. The Serisier family have a long story in the wine industry both in Bordeaux, France and in Dubbo, Australia. It's refresing to see this kind of operation mixing their Old World roots with the New World approach. This  grand vin is intending to express the traditional values of Bordeaux red wines with the advantage of being enjoyed relatively young. Made from Merlot grapes the terroir is comprised of ideal, free-draining clay and limestone soils over a deep bedrock of limestone. Situated on a plateau at an altitude of 55 metres it is perfectly situated with maximum exposure to the sun for ripening the grapes.

packaging

Elegant, distinctive and classic. It has the facade of the Chateau Cadillac on a white label. Gold foil as well as cork closure give a premium look that impresses. The long bottle with slight broad shoulders stands out on any table, it really presents as a luxury item.

opinion

The name of this cuvee is derived from the ancient name of the fields outside Chateau Cadillac, 'Champs du Bout du Monde' or 'Fields at the End of the World'. I was introduced to this wine by my mentor Peter Scudamore-Smith MW, since he is the brand ambassador for Domaine Serisier in the Australian market. I truly loved the generosity and 'open arms' character of Le Bout de Monde. 2012 is fruit forward, dense and ripe, with well balanced oak and round, polished tannins and a long structured finish. Quite perfumed it offers a fresh and vibrant bouquet. On the palate it is smooth, deep and silky with extremely integrated tannins, giving it a graceful, supple and pleasant finish. This wine will enliven any table, as it represents the best of the Merlot variety in very smart packaging.

suggested food matching

Grilled meats. The richness of flavour in this merlot is ideal for a barbeque. A roast would also work, but I particularly enjoyed the smokey elements added by the grill. Quite a generous Merlot of silky texture, the interaction with the meat allows this matching to produce a melting sensation on the palate. I had this bottle over a barbeque with a good friend of mine and we both talked at length about how much pleasure the melting sensation provoked.

the final word

Domaine Serisier’s Bout du Monde is a premium offering luckily to be found in speciality bottle shops and restaurants with extensive wine lists. It has a charming personality with generous and balanced flavours. It’s actually one of the nicest Merlots I have had in a very long time. The silky tannins give it an overall sense of softness and detailed finish which make it suitable to enjoy with or without food.
